Okay, so, obviously these are straying from the overall idea of this site, but quite frankly I believe both of these would be a refreshing change of pace from most of the RPGs we've had here.
Dragon Age: Doesn't necessarily have to follow the path of Origins, but it could take place in the realm of Thedas after the events of the game. A topic on the history of it can be written for those who have never played it before and I'm pretty knowledgable on the game... Having had it as my obsession up until Mass Effect, which is currently diverting my attention from it.
The Elder Scrolls III: Morrowind: Would likely take place during the events of the game with the destiny prophesied by Azura, concerning the Nerevarine, Lord Indoril Nerevar's reincarnation; though this does not have to be. Again, a topic on history can be written about it for those who haven't played it.
Both of these games have excellent potential for text-based RPGs, being RPGs themselves. Groundwork for a story can be laid fairly quickly, this topic is merely to find out who would actually want to participate in either of them.

I gotta say a Morrowind rpg would be more amibiguous and I like the lore more than DA:O. The basic world of Elder Scrolls is also far more developed, making it easier to simply jump into and begin.

I have no idea what the first one is and only the vaguest recollection of the second choice. So I'll assume both are musical RPGs with monsters and dead communists and bunnies and rainbows and smiles and I'll call it a tie.
If I did post in the Morrowind one, would I have to be a freakin' elf? I hate those things. And all those other things, like dwarfs and cat people and the French. Could I be a person? Or a necromancer? Or a vampire? Or a vampire necromancer?

No, you would not have to be an Elf if you don't want to. Dwarves no longer exist in this place, aside from a few spirits still residing in Dwemer ruins within Morrowind, the cat people typically live as slaves along with the lizard people in the eastern part of the island, and there are no French people there. And yes to all your other questions. The Elder Scrolls universe has very diverse class selections. Feel free to get creative.

You can have a Necro Vamp. And a Berserker isn't rescricted to trolls or dwarfs. You can be a beautiful fantasy version of Lady Gaga and still be a Berserker.

But so far it's a toss up between a pissed off god or a family of vampires who happen to be necromancers who happen to be high on some drug that makes you quite strong and fast. And more varied. You have your swamp in the southwest and the eastern coast, the plains in the mideast, kinda deserty in the midnorthwest, hilly grasslands of the south, and finally the desolate ashland of the north, southeast, and volcaneotic ashlands in the middle.

I'd actually be more for Dragon Age than Morrowind, honestly. I'm still thoroughly enthralled by that game, regardless of how many times I've beaten it.
But I do love Morrowind too, and it's one of my favorites as far as fantasy RPGs goes. So while I didn't vote for it, I'd be willing to join in on it.
